Air Fryer Mayamachos
I have made one large kitchen equipment purchase during this COVID shutdown. I bought a Breville Smart Oven Air. I think it may be the best appliance investment I have made in a long, long time. Every several days we invent a new recipe using the air fryer. These Mayamachos are one of them. They are whole food plant-based, gluten free, without animal products and without oil. So… short answer, if you are looking for healthy, sumptuous flavor that you can get lost in, dive in here!
Air Fryer Mayamachos
Delicious nachos made with air fried Japanese yams and refried Mayacoba beans

Equipment
- Air fryer
- Sharp chef's knife or mandolin
- Potato masher
Ingredients
- i whole Japanese yam sliced thin, in rounds
- 2 cups Mayacoba beans cooked
- 1 small Shallot chopped fine
- 1-2 cloves Garlic fresh, smashed through a garlic press
- 2 small Greeen onions chopped fine
- 2 Tbs Chipotles in adobo
- 1 Tbs Ancho chilis in adobo
- Salt to taste
- 1 Avocado cut in cubes
- Salsa or pico de gallo
- Cilantro fresh leaves for garnish
Instructions
Prepare the Japanese Yam
- Remove the air fryer basket from the air fryer and preheat the air fryer to 415° F.
- Put a piece of parchment paper in the air fryer basket.
- Slice the yam into thin rounds to resemble chips. They should be no more than ⅛ inch, or about 3 mm thick.
- Put the sliced yam on the parchment paper in the basket.
- Place the basket in the air fryer. Set the timer for 16 minutes.
- Check the Yam slices periodically to make sure they do not burn.
- At 14 mins, take the air-fryer basket out of the air fryer and flip the yam slices (chips) over. Put them back in the air fryer for an additional 2 minutes. DO NOT LET THEM BURN!
Prepare the Refried Beans
- Steam saute the shallot and green onion in a skillet for about 1-2 minutes.
- Add the crushed garlic to the pan and continue to saute.
- Add the cooked beans.
- Stir to combine the ingredients.
- Add the chipotles and ancho chilis in adobo.
- Stir all, and mash with a potato masher.
- Add salt to taste.
- When hot, cover and keep warm until the yam slices (chips) are ready.
