Overnight Pistachio Almond Granola
Wake up to a fresh batch of cardamom-scented granola, which becomes crisp overnight in the cooling oven. It’s delicious with almonds, pistachios, and dried cherries, but you can use any nuts and dried fruit you like. Serve dry or with your favorite cultured plant based yogurt or milk.

Equipment

Ingredients
- 4 Cups old-fashioned rolled oats
- 1-1/2 cups slivered almonds
- 1 cup unsalted pistachios shelled and coarsely chopped
- 1 cup coconut chips or shredded coconut unsweetened
- 1 tsp. cinnamon ground
- 1 tsp. pink himalayan salt
- 1/2 tsp. cardamom ground
- 1-1/4 cup pure maple syrup
- 1/2 cup olive oil, OR walnut oil, OR coconut oil
- 3/4 cup cherries,(optional) dried, preferably unsweetened
Instructions
- Preheat the oven to 350oF. Line 2 cookie sheets with parchment paper.
- Position a rack in the center of the oven.
- Using a large spoon or silicone spatula, combine the oats, almonds, pistachios, coconut, cinnamon, salt, and cardamom in a large non-reactive (glass, ceramic, or stainless steel) bowl. Add the maple syrup, oil, and stir well.
- When the mixture is well combined, spread it out on 2 parchment lined cookie sheets. It should be about 1/4 inch thick.
- Place the loaded cookie sheets in the preheated oven. Set the timer for 15 minutes.
- Bake until just starting to turn golden, about 15 minutes.
- Remove the cookie sheets from the oven and stir the hot granola, turning over gently on the parchement paper.
- Return the cookie sheets to the oven, close the door, and TURN OFF THE HEAT.
- Allow the granola to stay in the oven undesturbed for at least 6-8 hours or overnight.
- In the morning transfer the granola to a large bowl. Break up any large clumps, if you like. Stir in the dried cherries and serve. Store in an airtight container for up to 1 month.
Notes
If you would like this recipe to be oil-free, substitute aquafaba 1:1 for oil. bake for 10 minutes stir and shut off the oven. leave undisturbed for 6 hours.
