Ingredients
iwholeJapanese yamsliced thin, in rounds
2 cupsMayacoba beans cooked
1smallShallotchopped fine
1-2clovesGarlicfresh, smashed through a garlic press
2smallGreeen onionschopped fine
2TbsChipotles in adobo
1TbsAncho chilis in adobo
Salt to taste
1Avocadocut in cubes
Salsa or pico de gallo
Cilantro fresh leaves for garnish
Instructions
Prepare the Japanese Yam
Remove the air fryer basket from the air fryer and preheat the air fryer to 415° F.
Put a piece of parchment paper in the air fryer basket.
Slice the yam into thin rounds to resemble chips. They should be no more than ⅛ inch, or about 3 mm thick.
Put the sliced yam on the parchment paper in the basket.
Place the basket in the air fryer. Set the timer for 16 minutes.
Check the Yam slices periodically to make sure they do not burn.
At 14 mins, take the air-fryer basket out of the air fryer and flip the yam slices (chips) over. Put them back in the air fryer for an additional 2 minutes. DO NOT LET THEM BURN!
Prepare the Refried Beans
Steam saute the shallot and green onion in a skillet for about 1-2 minutes.
Add the crushed garlic to the pan and continue to saute.
Add the cooked beans.
Stir to combine the ingredients.
Add the chipotles and ancho chilis in adobo.
Stir all, and mash with a potato masher.
Add salt to taste.
When hot, cover and keep warm until the yam slices (chips) are ready.
To Assemble the Mayamachos
Place 7 hot and crisp yam chips on a plate.
Put about 2 teaspoons of the refried bean mixture on each slice.
Put 2-3 small cubes of avocado on top of the beans on each chip.
Garnish with salsa or pico de gallo, course salt, and cilantro.
